Advisory boards

Three advisory boards have been involved in developing the New Nordic Diet. The purpose of the advisory boards was to optimise the development process, spearheaded by Claus Meyer, thereby ensuring that the ingredients, gastronomy and foods for children live up to the highest standards with regard to their health benefits, availability, sustainability, tastiness and much else besides.
 
Advisory board 1 looked at the Ingredients for the New Nordic Diet, and board members are Anja Biltoft-Jensen, a scientist from DTU Food; Martin Kreutzer, a BSc in Nutrition and Home Economics at LIFE; doctor Jerk Langer, cook Camilla Plum; and Associate Professor Henrik Saxe from LIFE.
 
Advisory board 2 looks at the Gastromic basis for the New Nordic Diet, and members are Bo Jacobsen, a chef and owner of Restaurationen; chef Katrine Klinken; Rene Redzepi, chef and co-owner of Noma; Torsten Schmidt, chef and co-owner of Malling & Schmidt; and cook Nanna Simonsen.
 
Advisory board 3 looks at the New Nordic Diet from children’s point of view, and members are Ole Poulsen, a teacher of domestic science at Holbergskolen; chef Kathrine Klinken; Marika Jensen, a health project manager at Hillerødgades skole; Klaus Holm, head of the school lunch scheme at Freinet skolen; and Kenneth Højgaard, a culinary entrepreneur with Copenhagen House of Food.
 
Moreover, Anne-Birgitte Agger, director of the Copenhagen House of Food, and Jan Krag Jacobsen, President of the Danish Gastronomic Academy, have been extremely helpful in the initial phases of creating the New Nordic Diet.
